Anthony is in Sardinia, an island off the coast of the Italian mainland with its personal tradition, language, structure, and lifestyle. He begins in northern Sardinia, assembly up with buddies Carlos and Lisa at Zia Forica. They pattern cctopus, fava beans, intestines, and donkey, all with a aspect of fine dialog. Then, Anthony learns the key behind panna carazao, a crispy flatbread that serves three functions – meals, plate, and utensil. He visits two aged girls who’ve been handmaking panna for generations and are desperate to share with Anthony and crew. Finally, it’s an array of freshly-made pastas, cheeses, and meats over a household dinner with a panoramic view.
